Ingredients
  

Cheese Base
  • 8 oz cream cheese, softened Microwave for 10-15 seconds if too firm.
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup crumbled feta cheese Can be substituted with vegan cheese.
Mix-ins
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup pecans, finely chopped Can substitute with walnuts or almonds.
  • 2 tablespoons green onions, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
Seasoning
  • to taste salt
  • to taste pepper
Coating
  • 1/4 cup additional chopped pecans Use finely chopped for coating.
  • 1/4 cup additional dried cranberries Use finely chopped for coating.

Method
 

Preparation
  1. Place softened cream cheese in a medium bowl. Beat until smooth and creamy.
  2. Add the shredded cheddar, crumbled feta, chopped cranberries, chopped pecans, and green onions. Fold in gradually until well mixed.
  3. Sprinkle in the garlic powder, onion powder, salt, and pepper. Mix until everything is well incorporated.
  4. Refrigerate the cheese mixture for about 30 minutes to firm it up.
Coating and Serving
  1. On a small plate, combine the additional chopped pecans and cranberries.
  2. Scoop a tablespoon of the cheese mixture, roll it into a ball, and coat it in the cranberry-pecan mix. Repeat until all cheese mixture is used.
  3. Arrange the cheese bites on a platter and refrigerate for at least 15 minutes before serving.

Notes

For maximum flavor, prepare a day ahead. Store in an airtight container for 3-5 days in the fridge or freeze for up to a month.
