Ingredients
  

Biscuit Dough
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 cup cold unsalted butter, cubed Use cold for flaky texture.
  • 1 cup shredded cheddar cheese
  • 3/4 cup buttermilk Substitute with milk and vinegar if needed.
Crab Filling
  • 1 cup cooked and seasoned crab meat Can use canned crab, ensure it's drained.
  • 1/4 cup green onions, chopped
  • 1/4 cup mayonnaise
  • 1 teaspoon Old Bay seasoning
  • 2 tablespoons lemon juice
Topping
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon lemon zest

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, baking powder, salt, and garlic powder.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the cheddar cheese and buttermilk until just combined; don’t overmix!
Prepare Crab Filling
  1. In another bowl, mix the crab meat, green onions, mayonnaise, Old Bay seasoning, and lemon juice.
Assemble Biscuits
  1. Scoop out some biscuit dough, flatten it slightly, and place a spoonful of crab mixture in the center.
  2. Fold the dough over to create delicious pockets.
  3. Place the stuffed biscuits on a baking sheet lined with parchment paper.
Cooking
  1. Bake for about 15-20 minutes or until golden brown and irresistible.
  2. Mix the melted butter with lemon zest and brush over warm biscuits before serving.
