  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 avocado, diced The creamy hero of this dish!
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced For a zesty flavor
  • Salt and pepper to taste
  • Optional: Greek or Italian dressing For an extra flavor punch!

Preparation
  1. In a large bowl, combine the black beans, black-eyed peas, corn, bell peppers, cherry tomatoes, red onion, avocado, and cilantro.
  2. Squeeze the lime juice over the mixture, and season it with salt and pepper to taste.
  3. If you're feeling adventurous, add some Greek or Italian dressing for extra flair.
  4. Stir gently to combine all those delicious flavors.
  5. Serve immediately as a dip with tortilla chips or as a colorful side for BBQ.

Notes

For optimal freshness, prepare without avocado and lime juice, then add them right before serving.
