Preparation
- Preheat the oven to 350°F (175°C) and prep a loaf pan with parchment paper and a touch of grease.
- In a large bowl, mash the bananas; add the eggs, cottage cheese, maple syrup, and vanilla. Mix until smooth.
- Gradually add the almond flour, cinnamon, and baking soda, blending gently.
- If using, fold in any mix-ins like walnuts, chocolate chips, or blueberries.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for about 50 minutes, checking after 30 minutes and covering with foil if necessary.
- Test with a toothpick; if it comes out clean, the bread is done!
- Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing.
Notes
For the best texture, don’t rush the cooling process. Enjoy it with maple syrup or nut butter.
