  • ½ cup cottage cheese

  • 2 ½ cups almond flour Whole wheat can be used for a denser texture.
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon Can add a pinch of nutmeg or ginger for spicing.

  • ½ cup walnuts, chocolate chips, or blueberries Add any mix-ins to enhance flavor.

Preparation
  1. Preheat the oven to 350°F (175°C) and prep a loaf pan with parchment paper and a touch of grease.
  2. In a large bowl, mash the bananas; add the eggs, cottage cheese, maple syrup, and vanilla. Mix until smooth.
  3. Gradually add the almond flour, cinnamon, and baking soda, blending gently.
  4. If using, fold in any mix-ins like walnuts, chocolate chips, or blueberries.
  5. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for about 50 minutes, checking after 30 minutes and covering with foil if necessary.
  2. Test with a toothpick; if it comes out clean, the bread is done!
  3. Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing.

Notes

For the best texture, don’t rush the cooling process. Enjoy it with maple syrup or nut butter.
