  • 2 tablespoons olive oil

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder

Method
 

Preparation
  1. In a large mixing bowl, combine the corn, black beans, bell pepper, and onion.
  2. In a separate small bowl, whisk together the lime juice, olive oil, salt, black pepper, cumin, and chili powder.
  3. Pour the dressing over the corn mixture and stir until well combined.
  4. Serve immediately with tortilla chips or refrigerate for 30 minutes to let those flavors meld together.

Notes

For best flavor, allow the salsa to sit for at least 30 minutes before serving. Use fresh corn when in season for added sweetness and crunch. Add chopped cilantro or diced avocado for additional flavor and texture.
