Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the corn, cherry tomatoes, red onion, bell pepper, and cilantro.
  2. In a smaller bowl, whisk together the olive oil, lime juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine all those lovely flavors.
  4. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld together.

Notes

For a charred twist, consider grilling the corn before adding it to the salad. This corn salad can be served with grilled chicken, steak, or as a topping for tacos. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
