  • 6 pieces hard-boiled eggs
  • 2 pieces jalapeño peppers, seeded and finely chopped
  • 4 strips bacon, cooked and crumbled
  • ¼ cup cream cheese, softened
  • ¼ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Cut the hard-boiled eggs in half lengthwise and carefully remove the yolks, placing them in a medium bowl.
  2. Using a fork, mash the yolks until smooth and creamy.
  3. Add the finely chopped jalapeño peppers, crumbled bacon, softened cream cheese, mayonnaise, Dijon mustard, garlic powder, salt, and pepper to the mashed yolks. Stir well until everything is evenly mixed.
  4. Generously spoon or pipe the yolk mixture back into the hollowed egg white halves.
  5. Optionally, sprinkle extra crumbled bacon and chopped jalapeños on top. Chill the eggs in the refrigerator until ready to serve.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Consider using crispy fried onions on top for added texture and flavor.
