Classic Cucumber Sandwiches

Ingredients
  

For the spread
  • ¾ cup cream cheese (whipped)
  • ¼ cup sour cream (or mayonnaise) Can use either
  • 2 tablespoons dill (finely chopped)
  • to taste Kosher salt
For the sandwiches
  • ½ English cucumber thinly sliced
  • 8 slices sandwich bread Crusts removed

Method
 

Preparation
  1. In a bowl, mix the cream cheese, sour cream (or mayo), chopped dill, and a pinch of kosher salt until smooth.
  2. Spread the mixture over one side of each slice of bread.
  3. Layer cucumber slices on half of the bread slices, slightly overlapping them.
  4. Top with the remaining slices of bread, spread side down, and gently press to close the sandwiches.
  5. Trim off the crusts and cut each sandwich into four pieces.
  6. Arrange on a serving dish, and optionally garnish with extra dill or cucumber slices.

Notes

For extra flavor, chill the filling for an hour before serving. Store sandwiches in an airtight container in the fridge for 2-3 days to maintain freshness.
