  • 2 cups fresh cilantro, chopped Chopped fresh for the best flavor.
  • 1 cup cooked shrimp, peeled and deveined Use leftover shrimp or cook fresh.
  • 1/2 cup shallots, thinly sliced
  • 1 cup cherry tomatoes, halved Add more for extra color.
  • 1 medium avocado, diced Add right before serving.
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lime juice Freshly squeezed for the best taste.
  • to taste salt and pepper Adjust according to preference.

Method
 

Preparation
  1. In a large bowl, combine the chopped cilantro, cooked shrimp, sliced shallots, cherry tomatoes, and diced avocado.
  2. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Serve immediately as a light meal or side dish.

Notes

For extra flavor, chill the salad for 10 minutes before serving. If preparing ahead, wait to add avocado until serving to prevent browning.
