Preparation
- Preheat your oven to 350°F (177°C). Line a baking sheet with parchment paper.
- In a medium-sized bowl, combine flour, baking soda, cornstarch, and salt. Whisk to mix evenly.
- In a separate large bowl, whisk the melted butter, brown sugar, and granulated sugar until smooth. Add the egg, egg yolk, and vanilla extract, whisking again until combined.
Mixing and Baking
- Gradually add the dry mixture into the wet ingredients, folding until cohesive. Don’t overmix!
- Gently fold in the semi-sweet chocolate chips or chunks.
- Scoop portions of dough using a cookie scoop or tablespoon on the prepared baking sheet, spaced about 2 inches apart.
- Bake for 10-12 minutes until the edges are golden and the centers look slightly undone.
- Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For thicker cookies, chill the dough for 30 minutes before baking. For a richer flavor, try toasting the butter until it’s brown before mixing.
