  • 4 pieces ripe bananas The riper, the better for sweetness.
  • 1/3 cup oil Vegetable or canola oil works well.
  • 1 cup sugar Optional; can be adjusted based on sweetness preference.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour Can be substituted with whole wheat flour for added nutrition.
  • 1/2 cup chocolate chips Dark chocolate chips can be used for a richer flavor.

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the bananas with a fork until nice and smooth.
  3. Mix in the oil and sugar (if using), followed by the vanilla extract.
  4. Add the baking soda and salt, and mix everything well.
  5. Stir in the flour until just combined — we don’t want to overmix!
  6. Fold in the chocolate chips.
  7. Pour the batter into the greased loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  9. Allow it to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Enjoy warm with butter or a scoop of vanilla ice cream for an indulgent treat. Can be stored at room temperature wrapped in plastic for 3-4 days or frozen for about 3 months.
