  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil For searing chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme Or your favorite herb
  • 8 oz egg noodles Or your preferred pasta
  • 4 tablespoons unsalted butter For garlic butter sauce
  • 2 tablespoons olive oil For garlic butter sauce
  • 1 teaspoon garlic, minced
  • ½ teaspoon salt Or to taste
  • Freshly ground black pepper To taste
  • Fresh parsley or basil, chopped Optional for garnish

Preparation
  1. Pat the chicken breasts dry with a paper towel for better searing. Season both sides generously with salt, pepper, garlic powder, onion powder, and thyme. Press those spices in!
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil shimmers, add the chicken breasts. Cook for about 6-7 minutes on each side until they’re golden brown and juices run clear. It should reach an internal temperature of 165°F (74°C).
  3. Remove the chicken from the heat and let it rest on a plate tented with foil.
Cooking Noodles and Garlic Butter Sauce
  1. Bring a pot of salted water to a boil and add the egg noodles. Cook until al dente according to the package instructions, then drain and keep warm.
  2. In the same skillet over low heat, melt 4 tablespoons of unsalted butter with 2 tablespoons of olive oil. Stir in 1 teaspoon of minced garlic and gently sauté for about 1 minute until fragrant.
  3. Add the cooked noodles to the skillet and toss until they’re coated in that heavenly garlic butter. Season with ½ teaspoon of salt (or to taste) and freshly ground black pepper.
Serving
  1. Slice the rested chicken breasts and serve them atop a bed of those buttery noodles. Garnish with parsley or basil for a pop of color and freshness.

Notes

For extra flavor, add a splash of lemon juice to the noodles before serving. You can substitute thyme for oregano or Italian seasoning if preferred. To make it creamy, mix in some heavy cream or sour cream to the garlic butter sauce. Leftovers can be stored in the fridge for 3-4 days, or frozen for up to 3 months.
