  • 1 lb ground chicken
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced For meatballs
  • 1/4 cup fresh parsley, chopped
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large egg
  • 1/4 cup breadcrumbs
Garlic Yogurt Sauce Ingredients
  • 1 cup yogurt
  • 2 cloves garlic, minced For sauce
  • 1 large lemon, juice of
  • to taste salt For sauce

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, onion, garlic, parsley, cumin, coriander, paprika, salt, pepper, egg, and breadcrumbs. Mix until well combined.
  3. Shape the mixture into small logs or balls and place them on a baking sheet lined with parchment paper.
Cooking
  1. Bake for 20-25 minutes or until golden brown and cooked through.
  2. While the meatballs are baking, prepare the garlic yogurt sauce by mixing yogurt, garlic, lemon juice, and salt in a bowl.
Serving
  1. Serve the meatballs in wraps, salads, or on their own with the garlic yogurt sauce on the side.

Notes

Chicken meatballs keep well in the fridge for up to 3 days. To freeze, do so for up to 2 months. They won't lose their flavor or texture when reheated. For variations, try adding different spices or making them vegan by using chickpeas or lentils.
