Notes
Store leftovers in the fridge for up to 3 days. Make the filling ahead of time but roll the tortillas just before eating to avoid sogginess. You can add crushed red pepper flakes for heat, use gluten-free tortillas, or toss in some croutons or cucumbers for extra crunch.
