  • 2 large tortillas Soft tortillas preferred
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience
  • 1 cup romaine lettuce, chopped Freshly chopped for crunch
  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Method
 

Preparation
  1. In a bowl, combine the shredded chicken, romaine lettuce, Caesar dressing, Parmesan cheese, salt, and pepper until well mixed.
  2. Lay out the tortillas and evenly distribute the chicken mixture onto each.
  3. Roll the tortillas tightly, folding in the edges to secure the filling.
  4. Slice in half and serve immediately.

Notes

Store leftovers in the fridge for up to 3 days. Make the filling ahead of time but roll the tortillas just before eating to avoid sogginess. You can add crushed red pepper flakes for heat, use gluten-free tortillas, or toss in some croutons or cucumbers for extra crunch.
