For the Chicken
  • 2 large chicken breasts
  • 1 tablespoon olive oil For cooking the chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
For the Filling
  • 0.5 cup ranch dressing
  • 0.5 cup sour cream Can substitute with Greek yogurt for a healthier option
  • 2 medium avocados
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 4 large flour tortillas Can substitute with whole wheat tortillas
  • 1 cup shredded lettuce
  • 0.5 cup diced tomatoes
  • 0.25 cup chopped cilantro
  • 1 tablespoon lime juice

Method
 

Preparation
  1. In a bowl, combine garlic powder, onion powder, paprika, cumin, salt, and black pepper. Rub this mixture all over the chicken breasts for full flavor coverage.
  2. Warm up olive oil in a skillet over medium-high heat. Add the chicken and cook for 6-7 minutes on each side until golden brown and cooked through.
  3. Let the chicken rest for 5 minutes, then slice it into bite-sized pieces.
Prepare Fillings
  1. While the chicken cooks, scoop the avocado flesh into a bowl. Add lime juice and a pinch of salt, mashing until smooth yet slightly chunky.
  2. In another bowl, blend ranch dressing and sour cream until smooth.
Assemble Burritos
  1. Take a flour tortilla and spread a generous spoonful of the avocado mash on it. Add the sliced chicken, then sprinkle on shredded cheddar and mozzarella.
  2. Add shredded lettuce and diced tomatoes, then sprinkle on some chopped cilantro.
  3. Carefully roll the tortilla around your filling, tucking the ends to secure it. Warm it briefly in a skillet for a slightly crispy exterior.
  4. Serve warm and relish each delicious bite!

Notes

Save time by using rotisserie chicken. For a spicier kick, add jalapeƱos or hot sauce to the filling!
