  • 6 pieces hard-boiled eggs Fresh eggs for best flavor
  • 1/4 cup mayonnaise
  • 1/4 cup cream cheese For a silkier filling, whip before mixing
  • 1/2 cup shredded cheddar cheese Can substitute with pepper jack for heat
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste Adjust seasoning as needed
  • Paprika for garnish

Method
 

Preparation
  1. Cut the hard-boiled eggs in half and remove the yolks.
  2. In a bowl, mash the yolks with mayonnaise, cream cheese, cheddar cheese, Dijon mustard, salt, and pepper until smooth.
  3. Spoon or pipe the mixture back into the egg whites.
  4. Sprinkle with paprika for garnish.
  5. Serve chilled and enjoy!

Notes

These can be prepared a day in advance and stored in the fridge. Serve chilled for enhanced flavors. Avoid freezing for best texture.
