Preparation
- Boil the eggs: Place eggs in a pot, cover with cold water, bring to a boil, cover, and turn off heat. Let them sit for 10-12 minutes, then transfer to an ice bath for at least 10 minutes.
- Prep the yolks: Crack and peel the eggs. Slice them in half lengthwise, placing the yolks in a bowl and the whites on a platter.
- Mix the filling: Mash the yolks and mix in the mayonnaise, mustard, sour cream, Cajun seasoning, garlic powder, onion powder, and seasoning to taste.
Cooking the Shrimp
- Dry the shrimp, toss with Cajun seasoning, and sauté in olive oil or butter until pink. Add garlic and lemon juice during the last 30 seconds.
Assembly
- Fill the eggs: Spoon or pipe the yolk mixture into the whites, mounding slightly.
- Garnish: Top with a shrimp, sprinkle with paprika, and add herbs if desired. Refrigerate for 30 minutes before serving.
Notes
These deviled eggs can last about 3-5 days in the fridge when covered. For an ahead-of-time option, assemble without garnishing the shrimp and wait until serving to fully decorate.
