Ingredients
  

For the Cajun Salmon
  • 1 pound salmon Fillets
  • 1 tablespoon olive oil For drizzling
  • 1/2 teaspoon kosher salt
  • 1/4 to 1/2 teaspoon black pepper
  • 1 teaspoon Cajun seasoning
For the Avocado Lime Sauce
  • 1 medium avocado Ripe
  • 1/4 cup water Or 60ml
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons white wine vinegar
  • 1 1/2 teaspoons maple syrup
  • 1/2 cup cilantro Loosely packed, fresh
  • 1/4 teaspoon granulated garlic
  • 1/2 teaspoon salt
For the Salad
  • 4 to 6 cups salad greens
  • 2 large carrots Shredded
  • 1 large apple Sliced
  • 2 tablespoons pumpkin seeds Toasted, for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. Drizzle the salmon with olive oil and season with kosher salt, black pepper, and Cajun seasoning, rubbing spices gently into the flesh.
Cooking
  1. Slide the seasoned salmon into the oven and bake for 12-15 minutes until it flakes easily with a fork.
  2. Meanwhile, scoop avocado into a blender, adding water, olive oil, lime juice, white wine vinegar, maple syrup, cilantro, granulated garlic, and salt. Blend until smooth and creamy.
Assembly
  1. In a large bowl, mix salad greens, shredded carrots, and sliced apple. Toss gently.
  2. To serve, place the salmon beside the colorful salad on a plate and drizzle generously with the avocado lime sauce.

Notes

This dish keeps well in the fridge for up to 3 days. Store the salmon and salad in separate containers to avoid sogginess. Reheat in the microwave for best texture.
