  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon extract
  • 2 tablespoons lemon juice Freshly squeezed is best.
  • 2 tablespoons lemon zest Adds vibrant flavor.
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 3 cups flour, measured accurately Use the spoon and level method.
  • 1 cup white chocolate chips
  • 1 cup fresh blueberries Can use frozen if preferred.

Preparation
  1. Gather all ingredients, allowing butter and cream cheese to sit at room temperature.
  2. In a large bowl, beat the butter and cream cheese together until light and fluffy.
  3. Gradually add the granulated sugar, mixing until fully integrated.
  4. Stir in the egg, vanilla, lemon extract, lemon juice, and zest until well blended.
  5. In a separate bowl, sift the flour, salt, and baking soda.
  6. Gradually add the dry mixture to the wet ingredients, mixing at low speed for a smooth dough.
  7. Gently fold in the white chocolate chips and blueberries using a spatula.
  8. Cover the dough and chill in the fridge for at least 30 minutes.
  9. Preheat your oven to 350°F (175°C).
  10. Scoop the dough into tablespoon-sized balls and roll each in the extra granulated sugar.
  11. Arrange the cookie balls on a lined baking sheet and bake for 12-14 minutes or until the edges are golden.
  12. Allow the cookies to cool on the sheet for 5 minutes before transferring them to a wire rack.
