  • ½ cup butter, softened Make sure butter is soft for the best texture.
  • ¼ cup granulated sugar Standard white sugar.
  • ½ cup brown sugar Light or dark brown sugar can be used.
  • 1 teaspoon lemon extract Adds a refreshing kick.
  • 1 cup all-purpose flour Basic flour for cookie structure.
  • 1 teaspoon baking powder Leavening agent.
  • ½ teaspoon baking soda Helps cookies rise.
  • ¾ cup fresh blackberries, washed, dried, and cut in half Do not squish the blackberries.

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer for about 3-5 minutes until light and fluffy.
  3. Add the lemon extract to the mixture.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and baking soda. Gradually add this dry mix to the wet ingredients, mixing until just combined.
  5. Gently fold in the blackberries using a spatula.
  6. Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until the edges are golden brown and the centers are set.
  8. Cool the cookies on the baking sheet for about 5 minutes, then transfer them to a wire rack.

Notes

Store cookies in an airtight container for 3-5 days at room temperature. Freeze cookies for up to 3 months; thaw before serving.
