Baking Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer for about 3-5 minutes until light and fluffy.
- Add the lemon extract to the mixture.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and baking soda. Gradually add this dry mix to the wet ingredients, mixing until just combined.
- Gently fold in the blackberries using a spatula.
- Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are golden brown and the centers are set.
- Cool the cookies on the baking sheet for about 5 minutes, then transfer them to a wire rack.
