  • 1 cup fresh blueberries Can substitute with other berries
  • 2 tablespoons fresh thyme Or 1 tablespoon dried thyme
  • 2 tablespoons olive oil For searing the chicken
  • 2 cloves garlic, minced Adds flavor; can toast for extra taste
  • Salt and pepper to taste
  • 1 piece Juice of 1 lemon For acidity and flavor balance

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large ovenproof skillet, heat olive oil over medium heat.
  3. Season the chicken breasts with salt, pepper, and minced garlic.
Cooking
  1. Sear the chicken in the skillet until golden brown on both sides, about 4-5 minutes per side.
  2. Once browned, add the blueberries, thyme, and lemon juice to the skillet.
  3. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  4. Remove from the oven and let it rest for a few minutes before serving.

Notes
