Preparation
- Preheat the oven to 375°F (190°C).
- In a large ovenproof skillet, heat olive oil over medium heat.
- Season the chicken breasts with salt, pepper, and minced garlic.
Cooking
- Sear the chicken in the skillet until golden brown on both sides, about 4-5 minutes per side.
- Once browned, add the blueberries, thyme, and lemon juice to the skillet.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it rest for a few minutes before serving.
