Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- In a large mixing bowl, combine ground beef, 1/4 cup of BBQ sauce, shredded cheddar, garlic powder, onion powder, black pepper, and kosher salt. Mixing with your hands works best for even incorporation.
- Divide the mixture into 12 equal portions and roll into balls about 1.5 inches in diameter. Create a small indentation with your thumb, add a pinch of extra cheese, then seal it for a cheesy surprise.
- Wrap each beef ball tightly with a strip of bacon, overlapping slightly, and secure with a toothpick.
- Brush the remaining BBQ sauce over each bacon-wrapped bomb.
Cooking
- Arrange the bombs on your baking sheet, providing about an inch of space between them. Bake for 22-25 minutes until the bacon is crispy and the internal temperature hits 160°F.
- Let rest for 3-5 minutes for juicy perfection. Transfer to a serving platter, sprinkle with diced green onions if desired, and enjoy with extra BBQ sauce for dipping.
Notes
Store leftovers in the fridge for up to 3 days or freeze for about 3 months. Reheat in the oven for the best taste. Consider different cheeses or herbs for added flavor.
