Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the mashed bananas, vegetable oil, eggs, vanilla extract, and sugar until smooth.
- In a separate bowl, sift the flour, baking soda, and salt together.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Don’t overmix!
- Fold in the chopped nuts, if you're feeling nutty.
- Pour the batter into the prepared loaf pan and sprinkle extra nuts on top if desired.
Baking
- Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Serve warm with butter, drizzled with honey, or topped with cream cheese. Store in an airtight container for about 3-4 days at room temperature, up to a week in the refrigerator, or freeze for up to 3 months. Reheat in the microwave or toast slices for added crunch.
