  • 3 pieces ripe bananas, mashed Riper bananas are sweeter.
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 large egg, beaten Can be replaced with flaxseed meal for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Mix in the sugar, beaten egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and mix in.
  6. Add the flour and stir until just combined. Do not overmix!
  7. Pour the batter into a greased 4x8 inch loaf pan.
  8. Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm with butter, honey, or cream cheese. For add-ins, consider walnuts or chocolate chips. Store in an airtight container for up to 4 days, or freeze for longer storage.
