Preparation
- Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla extract—mix well.
- Finally, fold in the flour until just incorporated.
- Pour the batter into the greased loaf pan.
Baking
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for a few minutes, then turn it onto a wire rack to cool completely.
Notes
Serve warm with creamy butter or honey. Store in an airtight container for 4-5 days, or freeze for longer storage. Reheat in the microwave or toast.
