Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
For the Filling
  • 1 cup mozzarella cheese, shredded
  • 0.5 cup parmesan cheese, grated
  • 2 tablespoons minced garlic
  • 1 cup chopped fresh baby spinach
  • 0.25 cup chopped fresh parsley
  • 0.25 cup chopped fresh basil
For the Wrap
  • 4 pieces large tortillas or wraps
  • Fresh herbs for garnish optional

Method
 

Preparation
  1. Season the chicken breasts with salt, pepper, onion powder, smoked paprika, oregano, and basil. Massage the spices into the chicken.
  2. In a skillet, heat olive oil over medium heat. Add seasoned chicken and cook for 6-7 minutes on each side until golden brown. Transfer to a plate to cool slightly and then slice.
Filling and Assembly
  1. In a bowl, combine mozzarella, parmesan, minced garlic, chopped spinach, parsley, and basil. Mix well.
  2. Lay one tortilla flat, spoon the cheese mixture in the center, and add a few slices of chicken. Do not overfill.
  3. Fold in the sides of the tortilla and roll it up snugly.
Baking
  1. Preheat your oven to 375°F (190°C). Place the wraps seam-side down on a parchment-lined baking sheet and drizzle with olive oil.
  2. Bake for 15-20 minutes until golden brown.
Serving
  1. Let cool briefly, garnish with fresh herbs if desired, and serve.

Notes

Store leftovers in the fridge for up to 3 days. Can be frozen for longer storage. Reheat in the oven or skillet to maintain crispiness.
