  • 4 pieces salmon fillets Fresh or thawed frozen
  • 2 tablespoons Cajun seasoning Adjust to taste
  • 1 tablespoon olive oil
For the avocado lime sauce
  • 1 piece ripe avocado
  • 1/2 cup Greek yogurt Can substitute with sour cream or a dairy-free alternative
  • 2 tablespoons lime juice
For serving
  • Vegetables or rice Your choice

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a baking tray lined with parchment paper.
  3. Drizzle olive oil and sprinkle Cajun seasoning over the salmon fillets, ensuring they are evenly coated.
Cooking
  1. Bake the salmon in the preheated oven for 12-15 minutes or until cooked through.
  2. While the salmon is baking, prepare the creamy avocado lime sauce by blending the avocado, Greek yogurt, lime juice, salt, and pepper until smooth.
  3. Once the salmon is done, remove it from the oven and serve it topped with the avocado lime sauce.
  4. Garnish with fresh cilantro and serve alongside your favorite vegetables or rice.

Notes

For best flavor, blend the avocado sauce until velvety smooth. Store leftovers in an airtight container in the fridge for up to 3 days. Salmon can be frozen plain (without the sauce) for about 2 months.
