  • 1 ripe ripe avocado Make sure it's soft for easy mashing.
  • 1 teaspoon Dijon mustard Adds tanginess to the filling.
  • 1 tablespoon lime juice Keeps avocado fresh and adds flavor.
  • Salt and pepper to taste Adjust based on personal preference.
Optional Toppings
  • paprika For garnish and added flavor.
  • fresh herbs Such as chives or parsley.

Method
 

Preparation
  1. Boil the eggs: Place the eggs in a pot and cover them with water. Bring to a boil and let them simmer for 9-12 minutes.
  2. Cool and peel: Transfer the eggs to an ice bath. After cooling, peel the eggs and slice them in half lengthwise.
  3. Mix it up: Scoop out the egg yolks into a bowl. Add the avocado, Dijon mustard, lime juice, salt, and pepper. Mash until creamy!
  4. Fill the eggs: Spoon or pipe the avocado mixture back into the egg whites.
  5. Garnish: Top with your favorite spices or toppings!

Notes

Store in the fridge for up to 2 days, covered tightly. For make-ahead, prepare the filling in advance.
