- Boil the eggs: Place the eggs in a pot and cover them with water. Bring to a boil and let them simmer for 9-12 minutes.
- Cool and peel: Transfer the eggs to an ice bath. After cooling, peel the eggs and slice them in half lengthwise.
- Mix it up: Scoop out the egg yolks into a bowl. Add the avocado, Dijon mustard, lime juice, salt, and pepper. Mash until creamy!
- Fill the eggs: Spoon or pipe the avocado mixture back into the egg whites.
- Garnish: Top with your favorite spices or toppings!
Notes
Store in the fridge for up to 2 days, covered tightly. For make-ahead, prepare the filling in advance.
